| Abstract: | การศึกษาการขยายขนาดของเครื่องหมักแพคคอลัมน์แบบอนุกรมสี่ชั้น จากเครื่องหมักขนาดเส้นผ่าศูนย์กลาง 7.2 เซนติเมตร ไปเป็นเครื่องหมักขนาดเส้นผ่าศูนย์กลาง 20 เซนติเมตร จากการศึกษาหาตัวแปรที่จำเป็นและมีผลกระทบต่อการหมักอันได้แก่ อัตราการไหลเข้าของน้ำหมักและอัตราการใช้อากาศในแต่ละชั้น พบว่า สภาวะที่เหมาะสมเพื่อทำให้เกิดน้ำส้มสายชูในอัตราที่ใกล้เคียงกับเครื่องหมักขนาดเล็กคือ อัตราการไหลข้าวของน้ำหมัก 72 ลิตรต่อนาที อัตราการให้อากาศในเครื่องหมักคอลัมน์ที่ 1 และ 3 เท่ากับ 3.2 และ 1.6 ลิตรต่อนาที ตามลำดับ นอกจากนั้น การศึกษาชนิดของน้ำหมักและอัตราส่วนผสม พบว่า ไวน์น้ำอ้อยและไวน์สัปปะรดสามารถใช้ทดแทนกันได้ และจากการคำนวณค่า kʟa พบว่า ค่า kʟa ของเครื่องหมักขนาดเล็กและเครื่องหมักขนาดใหญ่มีค่าเป็น 2.73x10-ᵌ และ 2.63x10-ᵌ กรัมต่อตารางเซนตเมตร-ชั่วโมง ตามลำดับ ซึ่งเป็นค่าที่ใช้เป็นบรรทัดฐานในการขยายขนาดของคอลัมน์แบบสี่ชั้น |
| Other Abstract: | The scale-up or sery or four stages packed column fermenter from 7.2 centimeters in diameter to 20 centimeters in diameter was studied. The necessary parameters which affect the venegar fermentation such as aeration rates in each packed column , flow rates of wort were studied. It was found that the flow rate or wort was 72 lit/min and the aeration rate were 3.2 and 1.6 lit/min in the first and the third packed column respectively. In addition to this study it was found that the wine from sugar cane juice and from pine apple juice gave no different in the rate or production. From the calculation of kLa or the two columns , the small and the large , it was found that the kLa values were 2.73x10⁻³ and 2.63X10⁻³ gm/cm⁻² -hour respectively. These values will be used as a standard in scaling up a sery of fourstages packed column |
