| Abstract: | เตรียมเปลือกแคปซูลแอลจิเนตด้วยสารละลายผสมของแอลจิเนต กลีเซอรอลและแบคทีเรียล เซลลูโลสแห้ง ในการศึกษาเบื้องต้นใช้สารละลายแอลจิเนตความเข้มข้น 1 เปอร์เซ็นต์โดยน้ำหนักต่อปริมาตร แบคทีเรียลเซลลูโลสแห้ง 0.1 และ 0.2 เปอร์เซ็นต์ และกลีเซอรอล 15 และ 20 เปอร์เซ็นต์ จะได้ประสิทธิภาพ การเตรียมแคปซูลดีที่สุด (92 เปอร์เซ็นต์) เมื่อใช้แบคทีเรียลเซลลูโลสแห้งและกลีเซอรอลเท่ากับ 0.1 และ 20 เปอร์เซ็นต์ ตามลำดับ แคปซูลมีลักษณะเป็นทรงกลมและเรียบ มีขนาดของแคปซูลเท่ากับ 4.36 มิลลิเมตร ความหนาของเปลือกแคปซูลเท่ากับ 0.45 มิลลิเมตร ในการเติมสารสกัดขมิ้นและแอนโทไซยานินจากดอก อัญชันลงในสารละลายแอลจิเนตผสมมีขั้นตอนที่ต่างกัน นอกจากนี้ยังได้เตรียมฟิล์มแอลจิเนตผสมสารสกัด ขมิ้นและแอนโทไซยานินจากดอกอัญชันเพื่อศึกษาสีที่เปลี่ยนแปลงไปภายในเวลา 7 วัน พบว่าสีไม่มีการ เปลี่ยนแปลงอย่างมีนัยสำคัญ |
| Other Abstract: | The shells of alginate capsules were prepared using the mixture of alginate, glycerol and freeze-dry bacterial cellulose (BC). The 1% w/w of alginate solution, 0.1 and 0.2% of BC and 15 and 20% of glycerol were preliminary studied. The most effective efficiency (92%) for preparation of alginate capsule was 0.1 and 20% of BC and glycerol, respectively. The capsules were spherical and smooth surface with size of 4.36 mm. The thickness of capsule shell was 0.45 mm. Turmeric extract (yellow) and anthocyanin from butterfly pea (blue) were added in the mixture of alginate together with zein using different process. In addition, alginate films with turmeric extract and anthocyanin were fabricated and examined the color changing within 7 days. The result showed that the color was not change significantly. |
